Buffalo Chicken Dip

Football season approaches and it looks like we might actually get to enjoy a season after much uncertainly surrounding COVID. In such times I don’t think I’ve ever needed the escape from reality that sports can provide more than I do right now. Gatherings may be smaller than in past years but this buffalo chicken dip is super easy to put together and in this worrisome time, I think we could all use one less thing to stress over.
INGREDIENTS
BUFFALO CHICKEN DIP:
3 TBS unsalted butter
3 cups chicken, cooked and shredded
½ cup Frank’s red hot sauce
Juice of half a lemon
¼ cup sour cream
4 oz cream cheese, cut in pieces
¾ cup white cheddar cheese, grated
⅓ cup blue cheese, crumbled (for topping)
1 TBS chives, finely chopped (for topping)
Tortilla chips (for serving)
Celery/carrot sticks (for serving)
GO FOR IT
BUFFALO CHICKEN DIP:
Heat butter in a cast iron skillet over medium heat until melted
Add chicken and hot sauce and stir together about 2 minutes
Turn off heat, then stir in lemon juice, sour cream, and cream cheese (the heat from the chicken should cause everything to melt together but if not turn back on heat until everything is mixed in together)
Top with cheddar cheese, then place in 375°F oven for 10 minutes
Remove from oven and top with blue cheese and chives
Serve with chips and vegetables
NOTES:
The easiest thing you can do here is go buy a cheap rotisserie chicken at your grocery store and start shredding. Depending on the size you may have just enough chicken to complete this dish or you’ll be left with some leftovers for whatever you want. Save yourself the trouble of cooking here and try this.
You can also add more hot sauce for a spicier version. What you have here is probably a bit more on the creamy side but I’ve learned that usually pleases more people than not at a party.
Lastly, if you don’t have a cast iron skillet, use any oven safe skillet. Don’t have an oven safe skillet? Then complete steps 1-3 in any skillet, then transfer the contents to a baking dish and finish up.
