Garlic-Parmesan Potatoes
Who doesn’t love the mighty potato? Roasted, baked, mashed, fried - the perfect companion to a meal, or enjoyed well enough on its own. However, add a few simple upgrades to potato game and you’ll have a side you can’t put down.
INGREDIENTS
GARLIC-PARMESAN POTATOES:
1 lb fingering potatoes, cut lengthwise
3 large garlic cloves, minced
3 TBS Parmesan cheese, freshly grated
Zest of 1 lemon
1 tsp salt
½ tsp pepper
2 TBS olive oil
2 TBS unsalted butter
Parsley, roughly chopped (for topping)
GO FOR IT
GARLIC-PARMESAN POTATOES:
Preheat oven to 425°F
Meanwhile, in a bowl, toss cut potatoes with minced garlic, Parmesan cheese, lemon zest, salt, and pepper
Once well mixed, add olive oil and toss once more
Heat a cast-iron or other skillet over medium heat, then toss in butter
Once butter has melted, add in potatoes and stir about 2 minutes to make sure all butter is soaked up and potatoes seared
Roast in 425°F oven for 15 minutes (if not done, cook another 5 minutes)
Serve hot and fresh, topped with fresh parsley and more Parmesan if desired
NOTES:
You don’t have to use fingerling potatoes here but I like them because you only have to cut them once to end up with nice, thin slices that will sear and cook very nicely. If you use another potato just be sure to cut 1 inch cubes (or do as you prefer).
