Mofongo

If you’ve never been to Puerto Rico then you’ve probably never heard of Mofongo but it’s a staple on the island. Once I had it myself, I knew I had to find a way to recreate it at home. Altogether it’s actually quite simple to put together.

This recipe is inspired by the Island of Puerto Rico. You’d be hard pressed to find a dish that doesn’t have some rice and peas on the side.

INGREDIENTS

MOFONGO:

  • 3 large green plantains

  • 4 garlic cloves, pressed or ground into a paste

  • 2 tsp salt

  • ¼ cup olive oil

  • 1 TBS fresh lime juice

  • 1 cup pork rinds, crushed

  • Cilantro (for topping)
