Roasted Garlic Guacamole

Guacamole screams summer to me. It’s citrusy and bright - a little spicy - and brings a smile to your face. I’ve been making this for friends for so long that I don’t even use a recipe anymore. I just add and adjust until the taste is just right. Enjoy at the beach or in a backyard. If you’re with friends, it won’t last long.

INGREDIENTS

ROASTED GARLIC GUACAMOLE:

  • 4 ripe avocados

  • 1 garlic bulb

  • Olive oil

  • 1-2 limes

  • 1 serrano chile

  • ¼ large white or red onion

  • 2 TBS cilantro

  • Salt to taste

GO FOR IT

GUACAMOLE:

  1. With a sharp knife, chop about the quarter top of the garlic bulb off, exposing the cloves

  2. Place bulb on foil and pour 1 TBS of olive oil on exposed garlic cloves before sealing up bulb completely in foil

  3. Place in 400° degree over for 40 minutes

  4. When garlic is done cooking, remove from oven and allow to cool

  5. When cool enough to handle, squeeze bottom of garlic cloves and they should slide out very nicely

  6. Chop garlic best you can, then set aside

  7. Pit your avocados, placing the ripe fruit in a mixing bowl

  8. Mince onion very fine (or chunkier if that’s your preference)

  9. Chop serrano pepper very fine (remove seeds first if you want less heat)

  10. Chop cilantro very fine til you have 2 TBS on minced cilantro

  11. To bowl with avocado, add most (but not all) of roasted garlic, most (but not all) of the onion, most (but not all) of the serrano pepper, 1 TBS cilantro, a sprinkle of salt, and the juice of 1 lime

  12. Mash up and mix ingredients using a fork or masher

  13. Taste guacamole and add more garlic, onion, serrano pepper, cilantro, salt, and lime as per your preference

NOTES:

As I said, this is one of those recipes that I don’t even think twice about any more. Don’t be intimidated by that because it’s very hard to screw up beyond consumption and will probably still taste far better than anything you can find that’s pre-made at the store. But this is why I caution putting everything into the bowl all at once. Put most of what you have and save the rest for adjustments. You will make adjustments with this I’m sure of it. Everyone likes guacamole a little bit different and that’s okay.

I like serrano peppers but serranos are very spicy so you might consider a jalapeño instead or even something much weaker (like a bell pepper). Some people also add chopped tomatoes to their guacamole (I even know someone that likes sun dried tomatoes). Don’t like the garlic? Then skip it. Like ground pepper? Then add it in. Get creative. This is for you and your friends. Make something fun. This is an easy way to impressive at a summer party.
